A Recipe You Should Try

My best recipe ever is Slow Cooker Chicken Tortilla Soup
*One 28-oz can diced tomatoes, with their juice. (or you can use fresh tomatoes)
*2 med-size yellow or white onions, chopped
*One 4-oz can chopped green chiles, drained
*One clove garlic, minced
*1 Cup celery, chopped
*1/4 C. diced red bell pepper (optional)
*2 Cups water
*One 14.5-oz can chicken or vegetable broth
*1 tsp. ground cumin
*1 tsp. chili powder
*1/2 tsp. salt
*a few grinds black pepper
*1 bay leaf
*3/4 tsp. dried oregano
*1-1/2 pounds shredded chicken (from whole chicken slow cooked day before)
*One 10-oz can mexican corn, drained (or frozen corn)
*1 can tomatoe paste
Added at the end:
*1 box mexican rice
For serving:
*sliced avocado
*fresh chopped cilantro
*fried home-made tortilla stripes
I usually eyeball the amount of ingredients accordingly. I then saute the onions, chiles, garlic, red bell pepper, and celery till slightly softened. Combine in the slow cooker all ingredients and cook on LOW around 3-5 hrs or longer if needed. At the end, make up a box of mexican rice and combine it into the soup in the slowcooker. Now the soup part is done. This next step is the most critical step since it's what makes the dish super special. Cut flour tortillas into strips and fry in vegetable oil. Chop some cilantro and slice fresh avocado. These three things are key to a fabulous chicken tortilla soup. You will use these on top of the soup. Now enjoy!
